You may not be able to eat bananas if you have latex allergy because of cross reactivity known as latex fruit syndrome, where proteins in natural rubber latex are similar to proteins in certain fruits like banana, avocado, kiwi, and chestnut, so immune system that reacts to latex also reacts to these fruits. Banana contains proteins similar to latex proteins, so people with latex allergy, about 30 to 50 percent, also develop oral allergy symptoms after eating banana, such as itchy mouth, lips, tongue swelling, hives, stomach cramps, and in severe cases anaphylaxis. This is because of shared allergens like hevein and other plant defense proteins. Not everyone with latex allergy reacts to banana, but risk is higher, so doctors often advise caution and allergy testing. Similarly, avocado, kiwi, papaya, and chestnut have high cross reactivity. So you can't eat bananas with latex allergy because your immune system mistakes banana proteins for latex proteins and triggers allergic reaction, so avoidance or testing is recommended, and if you have latex allergy, you should discuss fruit avoidance with allergist and watch for symptoms after eating banana.
