Drying is the process of removing moisture, water, or other liquids from a material, object, or substance until it reaches a desired level of dryness. It is one of the oldest and most fundamental preservation and manufacturing processes used by humans. In scientific terms, drying involves the transfer of heat to a wet material to evaporate the liquid, and then the transfer of that vapor away from the material. This can happen through evaporation, vaporization, or sublimation. In everyday life, drying means removing water from clothes after washing, drying your body with a towel, or letting dishes air dry. In industrial contexts, drying is critical for preserving food by removing water that bacteria need to grow, such as drying fruits, grains, and meats, for producing materials like paper, lumber, and ceramics, and for chemical processes. In construction and restoration, drying refers to the deliberate removal of water from building materials after water damage using dehumidifiers and fans to prevent mold and rot. Drying is different from dehydration in that drying often refers to surface moisture removal while dehydration can refer to removing internal water from a living body. Ultimately drying is about reducing moisture content to make something usable, safe, stable, or preserved for longer storage.
