Minwax polyurethane, both oil-based and water-based, is considered food safe once it has fully cured, but it is not food safe while wet. Minwax states that its polyurethane finishes comply with FDA regulations for indirect food contact when fully cured, which means after the finish has completely hardened and all solvents have evaporated, it forms an inert film that will not leach harmful chemicals into food. For oil-based Minwax Fast-Drying Polyurethane, full cure takes about 30 days, and for water-based Minwax Polycrylic or Water-Based Oil-Modified Polyurethane, full cure takes about 7 to 21 days depending on humidity and coats. During application and curing, it is toxic and should not be used on surfaces that directly contact food like cutting boards or butcher blocks that will be cut on, because the film can be scratched and ingested. For those items, use food-grade mineral oil or butcher block oil instead. For dining tables, countertops that are not directly cutting surfaces, and serving trays where food might briefly touch the surface, fully cured Minwax polyurethane is safe to use and is widely used by furniture makers. Always allow full cure time and ensure good ventilation during application.
