A sprinkler, meaning lawn irrigation sprinkler head, will not go off if you touch it in sense of activating, as it only turns on when irrigation controller opens valve for scheduled watering, so touching head will not cause water to spray unless system is running. Lawn sprinkler heads are mechanical devices that pop up when water pressure is applied, so touching them while system off does nothing, though you could manually lift pop up head but no water will come unless zone is on. If you touch sprinkler while system is running, you will get wet but it will not go off or turn off. This is different from fire sprinkler in building, which is heat activated and will go off if exposed to high heat from fire, but touching fire sprinkler normally does not activate it unless you break fragile bulb. Fire sprinklers can be accidentally triggered if hit hard enough to break bulb, causing water to flow. So lawn sprinkler will not go off from touch, fire sprinkler requires heat or breaking bulb, not simple touch.
