It is always better and strictly necessary to run cold water when operating a garbage disposal. Cold water keeps fats, oils, and grease in a solid state so the spinning stainless steel blades can chop them into small particles that safely flush through the drainage pipes. Conversely, hot water melts greases into a liquid state that coats internal pipe walls and motor housings, eventually solidifying further down the main plumbing line and causing stubborn household clogs.
